California Nutritionist, Virtual Nutrition Counseling for Eating Disorders, MCAS, POTS & EDS
Most people searching for a California nutritionist have already tried the generic route: a meal plan from an app, a one-size-fits-all program, maybe a provider who meant well but did not really understand eating disorders, MCAS, POTS, or EDS. If that sounds familiar, you are ready for something built around your actual body and your actual history with food.
I am Phoebe Waller, MS, RD, the registered dietitian behind Waller Nutrition. I hold a master’s degree in clinical nutrition and dietetics, and my background spans every level of eating disorder care, from outpatient sessions to higher levels of treatment. I bring that same clinical depth to the nutrition side of MCAS, POTS, and EDS, working with both teens and adults who need more than a generic plan. I was recently invited to speak for the National Eating Disorders Association on building sustainable kitchen and grocery systems in recovery, and the idea at the center of that talk, structure without rigidity, is how I approach every client relationship. My goal is always a way of eating that actually fits your life, not one more set of rules to follow.
Virtual Nutrition Counseling for California Clients
Sessions happen entirely online, so being a nutritionist in California means I am reachable from San Diego, Los Angeles, the Bay Area, Sacramento, or anywhere else you happen to be. A virtual dietitian in California saves you the commute and the waitlist that comes with finding a specialist nearby, and it means you are not limited to whoever has an opening in your zip code. Whether you are looking for a dietitian in California in a major metro or a smaller community without a local specialist, a nutritionist in California working entirely online can meet you there. As a registered dietitian California clients trust for conditions that need real expertise, I built my practice around flexibility, so appointments fit around your schedule instead of the other way around.
Insurance for California Nutrition Clients
As a licensed dietitian California insurance plans may cover, I am in network with several major plans, including UnitedHealthcare, Aetna, Cigna, Golden Rule, and Optum. If I am out of network with your plan, I can provide a superbill for you to submit for possible out-of-network reimbursement, though that depends on your individual coverage. For clients in Santa Barbara and San Luis Obispo counties, I also accept CenCal, the local Medi-Cal benefit, and reserve a number of spots for CenCal clients. If you are not sure which option applies to you, reach out and we can sort it out before scheduling.
Eating Disorder Nutrition Support for California Clients
Eating disorders rarely respond to a generic meal plan, and most of the California clients I work with have already tried one. As an eating disorder dietitian, I start somewhere different: understanding what is actually in your kitchen and how that shapes your relationship with food day to day. For many people, simply being able to open the fridge, freezer, and pantry and see what is there, without panic or overwhelm, is the first real shift toward recovery.
From there, we build a grocery list that reflects your real life, not a worksheet from a program that was never designed for you. I often recommend leaving room for one or two flexible items on every trip, a small practice that chips away at food rules without asking you to abandon structure altogether. It is a slower way to build trust with food, but for most California clients, it is the one that actually lasts.
How a California Nutritionist Can Help You
Disordered Eating and Eating Disorder Recovery: Support for anorexia, bulimia, ARFID, binge eating, and chronic dieting, with an emphasis on rebuilding a sense of safety around food.
Mast Cell Activation Syndrome: Working through trigger foods and reactions without turning your diet into a list of everything you cannot eat.
POTS: Hydration, sodium, and meal timing strategies that respect how unpredictable your energy can be day to day.
Ehlers-Danlos Syndrome: Nutrition support for the GI symptoms and connective tissue demands that often come with EDS, grounded in what your body can actually tolerate.
Kitchen and Grocery Systems: The same framework I taught for NEDA, built to lower decision fatigue and make nourishing yourself sustainable instead of exhausting.
And much more. Book an appointment to see how we can support your goals.
